Happy with PurchaseReview Date: February 7, 2009 Reviewer: T. Bleeks, New Haven, Ct After sending untold hours pouring over reviews and wondering if I made the right choice, I can say that I'm very happy with my Pinzon pasta maker.
I like the fact that it is slightly narrower than some of the others since it gives me better control over the dough passing through the machine. Also it appears to be very sturdy and performed smoothly. I think problems people experienced with pasta makers are mostly due to the consistency of the dough. You need to find a simple recipe and be sure that the dough IS NOT sticky. If you get it right there is no cleaning required of the machine.
My only negative comment , which was mentioned by others, is that the handle may slip out of the machine. I solved this by putting a small piece of masking tape on the end of the handle.

M Merrill, Forest Grove, OR, USA I have chickens and I have eggs and I live an hour from the fresh pasta store.After 13 batches of egg dough, rolled out with a rolling pin, I told my sister I wanted this machine.
I made my first batch last night, and the consistancy of the rollers makes all the difference in the taste and tenderness of the pasta. Plus it is faster than my rolling pin.
The machine works well, comes with no useable directions. Its heavy and well made, requires a spot to clamp, the edge of my rolling table was perfect.
The tension knob is non intuitive,,, pull it out to turn the rollers!!!
The thin setting is very thin!, too thin for me. Meduim is about right.
My recipe is easy, 1/2 cup flour, 1/2 duram, 2 eggs, dash of olive oil. Knead into a ball, a firm dough, rest an hour.
Cut off small pieces, , flatten, dust with flour and roll.
I use a heavy baking sheet to hold noodles.
The cutting blade has two edges, fine and super fine. Fine is good enough for me. Be sure and seperate nooldes right away and allow to dry for a while before cooking. I just lay them on the cookie sheet.
Boil lots of water, add salt, then noodles coook and enjoy.
This machine makes making pasta really easy and fast. My family was very happy with the results.
two weeks later*** tension knob 3-4 givs the correct noodles for the cutter, the cutter can be sticky, dust more flour. total time to make noodles,7 minutes for one cup of flour.

Sometimes it works, and sometimes, well, not so much! I've wanted a pasta maker for a long time for lots of reasons. They look fun. It'll make me feel like a "pro". I love pasta!! When I saw this one, I just had to grab it. I'm so glad I did! The pasta recipe was simple and easy. I clamped the machine on my counter (make sure it's tight!) and started rolling the pasta through. It took a little practice, but pretty soon I was feeling like Giada. ha! It really was fun and I had a blast using it.
Oh! I also make crafts using polymer clay and have read that using a small pasta maker is a great way to condition the clay. Since the price is so low, I think I'm going to buy another one to use for my clay.
Buy it. You'll love it!
Great little machine!Review Date: July 8, 2009 Reviewer: John M Flora, Brookland, AR United States Living in northeast Arkansas where good pasta-making semolina flour is scarce, my Italian wife found herself at a bit of a disadvantage when our Pinzon pasta maker arrived.
Maria finally found a small cache of semolina flour in the cupboard last evening, mixed it with 2 parts of regular flour, and tried it out.
Although Maria is an excellent cook, with a good command of Italian cuisine, she had never used a pasta maker or seen one in operation. And, of course, neither had I.
The Pinzon 5.9-inch pasta maker comes with a very sketchy one-page instruction sheet that mostly deals with cleaning and maintenance and tells you virtually nothing about how to operate it.
So I turned to the Internet and quickly found a couple of how-to videos on YouTube.com. The thing is dirt simple to operate once you understand how it works, but it you've never seen one working, it can be a little daunting.
Maria was very impressed with the simplicity of operation and quickly cranked out a pot full of noodles that she combined with Italian sausage and a red sauce to make a very tasty dinner.
And yes, home-made pasta does taste better than the store-bought stuff. The Pinzon pasta maker is going to get a good workout once we get a reliable source for semolina flour.
The machine is very solidly built of stainless steel and the clamp works well to keep it from walking away on the countertop.
Works WonderfullyReview Date: November 16, 2009 Reviewer: Moffitt, I love this Pinzon Pasta Maker. This is actually my first pasta maker, so I can't really compare it to any of the other brands out there, but I have used it twice now and each time it has work wonderfully for me. This pasta maker comes with an attachment that makes two types of pasta & it has nine settings for the rollers. At first I did have a problem with it wanting to slide around while I was using it (my table is kind of slick), but putting a dish cloth under it solved the problem. I haven't had any problems with the handle "just falling out" like other reviews (on other pasta makers) complain about. I would do as the instructions say and make a small amount of dough to run through the machine to remove any leftover debris that may be in your machine before actually making your pasta and follow the instructions on how to clean it, too. The price that Amazon is selling this for is very reasonable and I am pleased with my purchase. I would definitely buy this item again & recommend it.
